Preheat the oven to 350 degrees.
Combine the cake mix, soy milk, and cherry pie filling in a mixing bowl, stir until smooth.
Pour the batter into a lightly greased cake pan. Bake for 20 to 25 minutes, or until a toothpick inserted at the center of the cake comes out clean.
Allow the cake to set in the pan for ten minutes, then flip it out onto a wire rack to finish cooling.
In a small sauce pan over medium heat, combine the soy milk, margarine, and sugar. Bring to a boil, then lower the heat and simmer for five minutes. Remove from heat and add the chocolate chunks, stirring constantly until smooth.
Drizzle the frosting over the cake while it's still warm. Let it set for five to ten minutes before serving.
