To make the dough in a bread machine: Combine the ingredients in the bread machine bucket in the order listed. Use the "dough" setting.
To make the dough without a bread machine: Combine the yeast, warm water, and sugar in a large mixing bowl and set aside for five to ten minutes. When there's about a half inch of froth on top, the yeast is ready. Add the soy milk, olive oil, and salt. Add the flour gradually and keep kneading the dough until it's smooth.
Leave the dough in the bowl and place a damp towel over the top. Let it rise until it's doubled in size.
Preheat the oven to its lowest setting - around 170 degrees
Knead the dough down lightly, then form it into a long loaf. Use your hands to coat the loaf with a thin layer of olive oil. Place the loaf on a baking sheet and slice decorative slits in the top.
Place the baking sheet in the oven, but leave the door open. Let the loaf rise until it doubles in size, then close the oven door and raise the temperature to 400 degrees.
Bake the bread for 15 to 20 minutes, or until golden brown and crusty.
