Preheat the oven to 350 degrees.
Combine the rolled oats, flour, baking soda, and salt in a large mixing bowl. Combine the margarine, sugar, soy milk, and vanilla extract in a separate bowl. Combine the wet ingredients and the dry ingredients, then add the chocolate chunks and dried cranberries.
Drop the dough in large spoonfuls onto a lightly greased baking sheet. Bake for 20 to 25 minutes, or until golden brown.
